Mother’s Day is fast approaching, I wanted to get this out as a last minute idea but it is great for a weekend feast as well :)!
Whole Foods had a sale on Cornish Hens so that is what I decided to use. However a whole roasted chicken would also work wonderfully with this as well.
Some suggestions for substitutions in this recipe…
Radishes: Rainbow Carrots or Breakfast/easter radishes
Fingerling Potatoes: Baby Dutch or Red Potatoes
Ramps: Regular garlic/scallions/young garlic
Drink Pairing:
For this recipe I made a Hugo Spritz
4 oz. Prosecco
2 oz. Club Soda
1 oz. St Germaine
1 Sprig of Mint (don’t forget to slap it!)
Squeeze of Lemon
Lemon Wheel
In a wine glass add ice. Build in the glass. Add Mint. Garnish with Lemon Wheel.
