Summer Sips is pushed up this week due to Thursday being the 4th (I hope everyone is excited as me to be eating hot dogs and spending time with friends and family!).
Transport me back to Summer 2016 when the Starbucks “Pink Drink” was the coolest drink to be walking around with at the mall. I had many requests for coconut and/or watermelon cocktails. So I put both together and it’s giving the Pink Drink Vibes…but better!
Equipment you need for this drink:
Immersion Blender/Blender/Juicer
Cocktail Shaker
Fine Mesh Strainer (if you don’t own a juicer)
Citrus Squeezer
Cocktail Jigger
(You can opt to purchase watermelon at the store if you want to skip juicing your own).
*If you don’t have a cocktail jigger and enjoy making cocktails at home I highly recommend purchasing one. A jigger provides maximum consistency when making/building your cocktails. Even after pouring countless drinks for 5+ years, I still reach for a jigger when it comes to multi step cocktails. For standard jiggers, the small side measures up to a full ounce with additional measurements. and the larger side measures up to 2 oz., the smaller ring below measures an 1.5oz. Trust me there is a big difference between the two lines when it comes to the taste of the drink.*

This drink would not be a good fit for a “batched cocktail” it will separate over time, as most creamy cocktails do.
If making multiple drinks at once, you can fit 2 servings in one shaker.
Leftover coconut cream? Add a tablespoon or two of sugar and whip into coconut whipped cream for a sweet treat!
Now that we have that out of the way lets jump into how I made it.


Watermelon Coconut Pink Drink
Ingredients
2 oz. White Rum
1.5 oz. Watermelon Lime Juice (1 oz. Watermelon .5 oz Lime Juice)
1 oz. Coconut Cream (Unsweetened)
.75 oz. 1-1 Simple Syrup
4-6 Strawberry Slices
Garnish: Watermelon Wedge and Strawberry Slices
How to make it:
For the Watermelon Juice:
Add 1 cup of diced watermelon and the juice of one lime. Blend and strain using a fine mesh strainer. (This can be made ahead of time and stored in the fridge for 2-3 days).
To build the cocktail:
In a shaker add strawberry slices and watermelon-lime juice. Muddle until the strawberries have broken down. Add in coconut cream, rum, and simple syrup. Shake until coconut cream is fully mixed. Pour into a glass. (You can use the same ice from the shaker!). Garnish with A watermelon wedge and extra strawberries. Serve and Enjoy!
Mocktail Version:
3 oz. Watermelon Lime Juice
1.5 oz. Coconut Cream
1 oz. Simple Syrup
4-6 Strawberry Slices Muddled
