Cherry Tomatoes and Zucchini are near and dear to my heart. Why? You might ask. While growing up, each Spring my Mom curated a huge garden in our backyard. The two things that stick out to me the most were her zucchini and cherry tomato plants.
Once harvesting began I remember searching through the prickly trailing vines to find the perfect sized zucchini, and occasionally finding overgrown giant ones that we missed from the time before. and seeing the plethora of vibrant red cherry tomatoes just waiting to be picked. I’d have to say this was a pivotal moment in finding beauty in small things.
So as basic as this recipe may be, it represents much more. :)
