Spring Shrimp Salad
Farmers Market Finds: Green Garlic, Asparagus and French Breakfast Radishes

This salad is crunchy, vibrant, springy and uses up all of the seasonal vegetables this time of year has to offer.
What is Green Garlic?
Green Garlic, also known as young garlic is just immature garlic. It’s more mild and delicate in flavor compared to a mature garlic bulb. Earlier in the season they are thinner and resemble scallions. Later on in the season they are thicker and more bulbous at the bottom.
If you don’t have access to green garlic… don’t worry, a substitution is included below. :)
One of my favorite things about this recipe is that the dressing serves a dual purpose. It acts as both a marinade for the shrimp and the dressing for the salad.

Ingredients
1 lb. Jumbo Shrimp Peeled and Deveined
5-7 oz. (1 package) Little Gem or Spring Mix Lettuce
