Tomato season isn’t quite over yet. You can still find fresh picked tomatoes at the farmers markets up until the end of September (depending on where you live of course).
As we are closing out summer recipes I think it’s only fair to send off with a classic; spaghetti pomodoro.
What makes a good Pomodoro?… fresh ingredients. This dish has very few ingredients so the fresher the better. Keep your jarred garlic (jarlic) away from this dish.
I went a little untraditional with the recipe… I couldn’t help myself I added a very very small splash of white wine to my sauce.
Now lets talk about pasta shape. You can use any long pasta shape, choose the one you like the most. The thin stuff (angel hair) is probably my least favorite of the bunch. My favorites being bucatini or squared spaghetti (Spaghetti Quadrato Chitarra)… if you haven’t tried squared spaghetti I highly recommend keeping an eye out for it. It grips onto red sauce beautifully and has a very nice bite.
Bonus points if you made fresh pasta, I did not. But don’t let me stop you!
Wine Pairing: Pinot Noir, Chianti, or Pinot Grigio. I personally didn’t follow my suggestion and popped open a bottle of Chardonnay.

Spaghetti Pomodoro
Servings: 4
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ingredients
12 oz. Spaghetti
12 oz. Cherry Tomatoes halved
14 oz. Canned Cherry tomatoes
4-6 Garlic Cloves Thinly Sliced
8-10 Fresh Basil Leaves torn
Splash of Dry White Wine
Pasta Water
1 Tbsp Butter
Olive Oil
Pinch of Red pepper flakes
Salt and Pepper
How I made it:
Bring a large pot of salted water to a boil.
In a large skillet add olive oil. On medium low heat add garlic. Fry the garlic for 1-2 minutes. Add red pepper flakes. Add freshly torn basil. Fry for an additional 1-2 minutes until oil is very fragrant. Add cherry tomatoes. Stir. Season with salt and pepper. Add Canned Cherry Tomatoes, bring sauce to a simmer. Add a splash of dry white wine. Simmer for 10-15 minutes. Add al dente spaghetti. Stir and add pasta water. Continue to toss until sauce is glossy. Finish with a knob of butter. Garnish with olive oil and basil.
