Lets face it, February might be the shortest month of the year but the weather is gloomy and cold. Chicken pot pie is the best way to beat the winter blues.
If you didn’t know, I pull a lot of inspiration from restaurants. I’ve worked in the restaurant industry for over five years (bartending, not cooking). One of the restaurants I worked at had a winter special. It was chicken pot pie. This pot pie was something staff and customers anticipated every single year. So naturally here I am recreating it my way.
I used oven safe soup crocks as my pot pie vessels. You could also use any oven safe baking dish that you may have laying around your kitchen. Now let’s jump into this recipe.
