Weeknight dinners have a bad rap for being boring and bland. However, I am a firm believer that no meal big or small should be described by either of those adjectives.

When it comes to a weeknight dinner there are a couple of things I like to keep in mind when planning.

  1. Is it something I can make ahead of time

  2. Can it be partially store bought (Sandra Lee’s semi homemade, but better)

  3. Is it something that makes good leftovers (because personally I never make lunch)

  4. Is it something that I can walk away from while it’s cooking because multi tasking is key to weeknights.

If I had to recommend one kitchen appliance that has made my life 1000x easier it would be my rice cooker. (No hate to the crockpot, those are great too… they just really are not my jam).

If I’m not having pasta as my carb for the day it is probably rice. The best part of a rice cooker is that it has clear instructions to make a perfect pot of rice every time. I press a button and walk away, once it’s done it automatically changes over to the warming setting so it’s never overdone/underdone.

Also, another huge game changer for me to enjoy dinner prep during the weekday is a good playlist. I’ve made a couple of playlists on Spotify so I will include the links below if you would like to check them out :)

So let’s skip the Cava order and make these super simple (semi-homemade) mediterranean-ish chicken bowls.

-Now let me preface I used store bought naan instead of using pita (hence the mediterranean-ish). It’s a personal preference and entirely up to you with what you prefer!
