Before I jump into the recipe I wanted to touch on something fairly important now that we are entering soups season. And that is…

Wash your Leeks!

And I don’t mean just the outsides.

Leeks (like most alliums) grow directly in the dirt. They might look clean on the outside but they love to hide dirt in their inner layers. So theres a couple of ways to efficiently wash them. Slice them down the middle and rinse through each layer, OR once you are done chopping them into your desired pieces throw them in a salad spinner/colander/soak them in water.

The flavor profile of a leek is similar to an onion but I find them a little brighter and more mild. They have a very fresh smell and won’t make you cry when chopping them. They also cook a little faster than a hefty yellow onion.

-I did use both onion and leek in this recipe, simply because it’s no secret I am an allium girly through and through. I like the heartiness of the onion and the delicate flavor from the leeks.

Soup Season Must Haves

  • Dutch Oven: Not only aesthetic but are super versatile in regards to Fall and Winter cooking. I find them as a cool way to bring your own uniqueness and personality into a kitchen as well. I’ve listed the three Dutch Ovens I own, they all vary in price range but all do a fantastic job in the performance department.

    • Tramontina Dutch Oven- Priced under $75

    • Hearth & Hand Dutch Oven- Priced under $50

    • Staub Dutch Oven- Currently on sale for $280 for the 7 Qt. This is the size I use in most of my soup videos (I love leftover soup). I have the White Truffle Color.

      • What’s so special about Staub?- Yes it is an INVESTMENT however they are under lifetime warranty, and the black enameled cast iron seems to sear meat better than any other pan I have. It also has spikes on the lid that help distribute moisture. (I personally like them over Le Creuset)

  • A Long Spatula: great for deep pots and scraping any bits that may get stuck to the bottom. I really enjoy the Earlywood Spatulas.

  • Soup Mugs: Most of my videos and photos use wide bowls. However, I absolutley LOVE a large soup mug that I can bring with me to the couch.
