It’s Friday Junior so lets kick off Summer Sips with a cocktail that will keep you cool on a hot summer day.
I am keeping this post short and sweet so lets jump into how I made it.
Cucumber Juice:
Grab a blender/immersion blender/juicer, whatever you have on hand. If you are not using a juicer add about 3 Tbsp of Water and half of an english cucumber cut into half moon slices. (8-12 slices). This resulted in about 1/3 Cup of Cucumber juice.
You can make this ahead of time and keep in the fridge for up to 3 days.


Cucumber Mint Mezcal Margarita Recipe
2 oz Mezcal - I used Del Maguey Vida
0.75 oz. Triple Sec
1 oz. Cucumber juice
1 oz. Lime Juice
0.5 oz. Agave (1 oz if you like sweeter!)
Mint sprig
