It’s that time of year again where the leaves are starting to change and the food we choose to eat does too. We’re moving into cozy, comforting dishes that feel like a warm blanket. Which for many of us (like myself) are our favorite types of food to eat.
While at the farmers market this weekend there was an abundance of mushrooms, celery and carrots. I couldn’t help but take inspiration from it. So to start off the many soups that I will be making this year I decided on a creamy chicken and mushroom soup.
If you don’t enjoy mushrooms like I do (GROW UP, just kidding). You can always leave the mushrooms out and it will embody more of a creamy chicken noodle vibe.
With all of this fall talk I think it’s only fitting that I share some of my favorite fall finds/go to pieces as well as ingredients and kitchen equipment that I reach for the most during this season
Things I’m loving for fall this year
All Things Kitchen
Parmesan Rinds- These are perfect for soups, you can find these at the grocery store in your artisanal cheese area. (Whole foods always has them!)
Better than Bouillon Roasted Chicken Base- This is a great way to give your soups a flavor boost! (I go through about 2-3 of these during fall/winter)
Garlic, Carrots, Celery and Onions- I constantly have these on hand since mirepoix is the base for a LOT of comfort food dishes
Dutch Oven- I have a 5.5 Qt Staub Cocotte in White Truffle which is the crown jewel of my kitchen. I also own a 5 Qt. Hearth and Hand Dutch Oven which is a great budget friendly option (I can’t seem to let go of it because it was my first “real” cooking piece I bought for myself). If you’re cooking for 2 I think a 4 or 5Qt is plenty big. If you’re cooking for a crowd(more than 2) or like to make leftovers go for the 5.5 or 6Qt.
Braiser- I used to think these were redundant to the dutch oven. However since having one I have changed my mind. It’s about half the weight of a dutch oven and with shallow stews or braises it helps keep the sear on the meat crispier because there is less steam circulating inside.
12 Inch Skillet- It’s no secret that my year round go-to piece of cookware is my 12 inch skillet from Tramontina. It is a true work horse. It’s oven safe up to 500ºF and budget friendly at only $35.00 (Use barkeepers friend stainless cleanser to make it shine like new).
Nail Polish- this is random, but I tend to change the shade by season. I spent about an hour online looking at and researching nail polish colors (ridiculous I know) BUT you can’t go wrong with either of these colors.
Shoes- Also random, but your feet are important and we need to put the sandals away.
Rothys- The Casual Clog - I have them in the color Dove and will be ordering them in the color Butternut. They are the perfect house shoe or casual shoe to run errands in.
Blundstone - High Top Boots - Perfect shoe for fall or winter. Cute, versatile, waterproof and comfortable.
Ugg- Do I dare say that I am still obsessed with my Tasman Slippers…
Alright, we have all of that out of the way I think it’s time to dive into the details of the Creamy Chicken and Mushroom Soup.
