If you live in the Chicago area you probably have heard of Portillo’s Chopped Salad. It’s a perfect blend of salad and pasta. Crunchy, refreshing and filling. I took inspiration from that salad and recreated my own. Spring or Summer this is a great recipe to make for any occasion.
This salad kicked off the beginning of Spritz Season. So let’s start with the classic Aperol Spritz.
Aperol Spritz Recipe:
2 oz. Aperol
4 oz. Prosecco
2 oz. Topo Chico or soda water
2 Dashes Orange Bitters
Fill a glass with ice, add orange bitters and Aperol. Fill glass with champagne. Top with soda water. (I personally enjoy using Topo Chico)
Okay on to the main star of the show, the salad.
