It’s been a long week/weekend. Life has a lot of ups and downs. Sometimes you need a little comfort in your life so banana bread sounded like the best option.
About a year ago I went on a banana bread kick, and for whatever reason I decided to gate keep the recipes? This recipe was given to my mom on her wedding day which if you can’t tell by the notecard… It has been well loved over many many years.
Recipe:
1/3 Cup Oil
2/3 Cups Sugar
2 eggs
1 & 3/4 Cup All purpose flour
1/2 tsp Salt
2 tsp Baking Powder
1/4 tsp Baking Soda
1 Cup Mashed Bananas
Instructions
Preheat Oven to 325°F
In a large bowl add oil, sugar and eggs. Beat together.
In a medium bowl add all dry ingredients, stir together.
Add dry ingredients and fold into wet ingredients. Smash the bananas and fold them in last.
Grease a loaf pan and pour mixture inside. You want to only fill the loaf pan 2/3rds of the way so you don’t have an over flow. Any extra batter put into muffin tins.
Bake for 45-50 minutes or until a tooth pick/knife comes out clean.
Serve and Enjoy.
Optional adjustments!
Add a dark brown sugar, chopped walnut, and cinnamon topping.
It is a very good basic banana bread and very flexible. Does not fail!
