Caesar salad recently had it’s 100th birthday, so I decided to give it a facelift. Grilled Baby Gem lettuce and a little calabrian chili action to give it a much needed ooomf.
Now, here I am breaking my “strip and ribeye don’t get marinades” rule. But I am throwing that rule in the garbage because the last two times I’ve broken it I was happy I did.
This is a perfect date night dinner/treat yourself dinner. Simple Rosemary and Balsamic Marinade, Sassy Caesar Salad and Classic Grilled Potatoes
Also, lets address the elephant in the room that revolves around caesar salad dressing. The anchovies. Don’t skip it, I promise it’s key to a successful dressing.
Wine Pairing: I paired this with one of my favorite reds, Ercole Barbera Del Monferrato. Sold in 1 Liter bottles at around 15 dollars it’s perfect for entertaining. (Personally I enjoy this slightly chilled). The flavor profile is very similar to a Tempranillo or Cab Sauv.
